Transglutaminase, referred to as TG. Microbial transglutaminase is widely found in animals, plants and microorganisms in nature. It is an acyltransferase that catalyzes the acyl transfer reaction between proteins, resulting in covalent cross-linking between proteins (or polypeptides). Enzyme, this cross-linking has a significant impact on the properties, gelling ability, thermal stability and water-holding capacity of the protein, thereby improving the structure and functional properties of the protein, and giving food proteins a unique texture and taste.
