What is Lactose?
Lactose is a carbohydrate characteristic of human and mammalian milk. It is a disaccharide composed of glucose and galactose with the formula C12H22O11. During the growth and development of infants, lactose can not only provide energy, but also participate in the development process of the brain.
Food grade lactose is a product made by concentrating whey or osmosis (a by-product of the production of whey protein
concentrate), superforating the lactose, then crystallizing the lactose out and drying it. Special crystallization, grinding and
sieving processes can produce various types of lactose with different particle sizes.
Lactose is widely used in food processing, and the following are some common examples:
1. Candy and chocolate: Lactose, as a major sweetener, is often used to make candy and chocolate.
2. Biscuits and pastries: Lactose can be used to regulate the sweetness and taste of cookies and pastries.
3. Dairy products: Lactose is one of the main components in dairy products, such as yogurt, lactic acid drinks, etc.
4. Seasonings: Lactose can be used to make various seasonings, such as soy sauce, tomato sauce, etc.
5. Meat products: Lactose can be used to enhance the taste and texture of meat products, such as ham and sausages.
In summary, lactose is a common food additive that plays an important role in food processing
